Easter Dessert ~ bunny truffles

Cute as a bunny 

 Sweet as can be

 Made for my honey 

And perfect for thee 

 Thee means you!  (had to google that one) (ok....never said I was a poet)  :)

 Need an easy, cute and delicious little sweet dessert for Easter?  These truffle bites fit the bill.  They are perfect for your Easter table and present as a darling little gift to someone special.  I found the colorful chinese take out boxes pictured below at the dollar store for mine.  And this recipe makes a lot too. 

 Simple ingredients are: 
  •  1 - 8 oz. size package of cream cheese.  (I used 1/3 less fat variety) 
  • 1 tsp. almond extract (I used 2 because I love almond)
  •  4-5 cups confectioner's sugar
  •  sweetened shredded coconut
Cream softened cream cheese and almond extract until fluffy.  Add 4 cups sugar, 1 cup at a time.  Then add the 5th cup of conf. sugar a little at a time until you can roll a small amount of dough in your hand and it holds together in a small bite size ball.  Roll in the coconut and store in closed container in the refrigerator.  It's still so cold here I have mine stored on the side porch (yikes).  :)  These are so cute and kids, young and old, will love them.

Remember the grass I showed you in an earlier post that I grew in my big papier mache bunny?  I plan to plunk a pretty pedestal cake platter, full of bunny tails, right in the middle of it for my brunch Easter table.

It's still frigid there, too? I'm sorry! We got dumped on by 8" of the white stuff last night, and it's supposed to keep snowing on and off over the next day or so. So much for Spring! :-(

These are the cutest little puffs! They remind me of those Hostess Snowballs I used to love to eat as a kid...except these are MUCH daintier!
