With lots of tomatoes still hanging on the vine, I wanted an easy peasy way to make a freezable sauce....no canning. I only grew a few plants of cherry tomatoes this summer, but I have some very sweet neighbors who shared their bounty with me....cukes, okra, and tomatoes. The secret of this simple great tasting sauce is in the roasting and not only makes a fabulous spaghetti sauce but is a foundation for many, many recipes. So gather all those late season tomatoes and get to roastin'. Enjoy.

I bet that is great, there is nothing better than starting with garden fresh ripe off the vine tomatoes!! Thank you, I wouldn't do any canning, but this I can do!

I like the freezer method as well. If I freeze them flat, they stack together and take up a fraction of the room as canned. I like that you add lots of garlic. I'm sure it is delicious!
